No Bake Chocolate Chip Cookies Recipe

An easy to make concoction with cacao nibs to provide a dark chocolate crunch. Cacao nibs are a great way to enjoy some healthy snacking while providing your body with a lot of nutrition. They are the least processed and most natural form of chocolate – high in antioxidants and a natural stimulate for the brain triggering feel good hormones.

 Ingredients

1 cup of almonds

1/3 cup of raw almond butter (or peanut butter) (90g)

1 cup of dates

2 tbsp cacao nibs

2 tbsp desiccated coconut

½ teaspoon vanilla extract                                  

Himalayan salt (for sprinkling)

How to make your No Bake Chocolate Chip Cookies

  1. Pulse the almonds into flour in your food processor.
  2. Add the rest of the ingredients and process until a crumbly dough forms. Add more dates or almond butter if your mixture is too crumbly and not sticky.
  3. For the dough into balls and gently press down with a fork to achieve a classic baking look. Sprinkle lightly with salt.
  4. Leave in the fridge over night.
